Each February we celebrate #RealBreadWeek by running a range of courses teaching guests how to bake fabulous bread and buns.
Some of the most delicious bakes are on our Scandinavian Baking course - Tuesday 11th Feb

Recipes for the day include:
* Solbullar – Sun Buns
* Kardemummabullar – Cardamom Knots
* Grotbrod – Oat Porridge Loaf
* Froet Rugbrod – Seeded Rye Loaf
* Knackebrod – Sourdough Rye Crispbread

Everyone goes home with their hand made bakes, recipes and the confidence to make more bread at home.

I’m constantly amazed at how many different cheeses can be made using the same three ingredients: Milk, Rennet & Salt
The very slight changes in *Technique *Temperature and *Time allows us to create hundreds of varieties.

I’m pretty happy with the 50/50 split between food from plants (fruit & veg) and food from animals (eggs & honey).

Each January I pick one very cold, short day to check on the bees 🐝🐝🐝🐝🐝🐝🐝
The timing is perfect, with minimum cocoons in the hive, to treat the colonies with oxalic acid to destroy the pesky varroa mites. I also check that entrances are clear and they have enough food stores to last them through the coming weeks.
This time last year as we opened hive after hive, we were devastated to discover that most of them had died 😢
👎🏻 warmer autumn delayed their winter preparations?
👎🏻 new queens failed to mate?
👎🏻 old bees dying and blocking the entrance?
👎🏻 slug invasion?
🌟Fortunately, my visits today confirmed that all seven colonies are fine and dandy - such good news 🙌🏻
